Sift the flours and salt together in a stand mixer bowl. Cut lard into 1" cubes and add to the flour / salt mixture. Use a dough hook attachment to mix until crumbly, with some pea sized lumps. In a measuring cup crack egg, add vinegar and whisk together. Add ice cold water to the 1 cup line. With machine running on low, add egg / vinegar / water mixture. Blend until a ball forms. Knead on a floured counter for a few minutes. Divide dough into 2 equal sized balls. This is enough dough for 2 pies with a bottom and top crust.
